BROCCOLI & CHEESE SOUP 🥣🥦

It’s January & nothing beats & warming winter soup 🥣 this is creamy & delicious 😋 and is the perfect easy lunch you can warm up in the week. Let me know if you make ! Enjoy 🧑‍🍳

THE STEPS 👇

1. Melt 80g of butter in a pot over a medium-low heat. Add 2 white chopped onions and 2 garlic cloves and red pepper flakes with a pinch of salt pepper. Stir well.
2. Next chop 600g of broccoli, discard tougher bits. Aid to the pot with 200g of boiled new potatoes. Pour in 250ml of water. Raise the heat to high and bring the mixture to a boil, then reduce the heat to medium-low and cover the pot. 
3. Simmer until the broccoli stalks and potatoes are tender throughout and easily split apart when pierced with a fork, about 20-25 minutes.
4. Get a hand blender and blend until completely smooth. Add in 100g of fresh Parmesan cheese and mix well. Finally add 80ml of single cream & allow to simmer on a low heat for 15 minutes. Serve with crusty bread! Keeps in fridge for 5 days. 👍
