Summer’s not over, so I’m making as many summer dishes as possible. So here’s my absolute fav *cooked* salmon poke bowl.

Cut salmon into cubes and set aside in marinade for about an hour.

Cut up your fav fruits and veggies: I used mangoes, jalapeños, green onions, sautéed carrots, and avocado. I also pickled some cucumbers and radish in a water, vinegar, salt and sugar mixture.

Once salmon has marinated for about an hour, over medium/high heat, sear salmon on both sides, making sure not to burn. About 2 mins each side. Turn heat to low and add soyaki mixture into pan. Simmer for about 8-10 mins, making sure to turn salmon often and pouring sauce over salmon so that it gets all the flavor.

Assemble over sushi rice: add salmon and toppings. Sprinkle with sesame seeds or TJs Furikaki seasoning. Drizzle with sriracha and/or spicy Mayo (we’re big sauce peeps in this household!).
