Feels good to make a nourishing meal after lots of good eats (and 🍷) this weekend! This was super tasty and very easy for a busy Monday.
I found this Slow Cooker Chipotle Chicken recipe from @halfbakedharvest – super simple and flavorful.

In your slow cooker combine:
– 1 diced yellow onion
– 4 cloves of chopped garlic
– 1 chopped jalapeño (seeds removed)
– 1 tbsp chipotle chili powder
– 2 tsp smoked paprika
– 2 tsp cumin
– 1/4 tsp cinnamon
– 5 cups chicken broth
– 1 can fire roasted tomatoes
– 4 boneless skinless chicken breasts

Cook on low for 8 hours or high for 4 hours. Once ready, use two forks and shred the chicken. Ladle the chicken over brown rice. Top with avocado and green onion. Enjoy!!
