PSA: go make these cookies!! I have been wanting to try this recipe for a while, but have been skeptical about how few ingredients it calls for. Happy to report there is no need to worry because these are 💯!! They were super easy to make and took a total of about 15 minutes all in. Great for school lunches or after school treats (or maybe with a coffee in the afternoon? 🙋🏼♀️)
Almond Butter Cookie Recipe:
• 1 cup almond butter (recommend Kirklands brand – if you know, you know)
• 1 cup unsweetened coconut flakes
• 1/3 cup maple syrup
• 1 egg
• 1 tsp vanilla
• 1/2 tsp baking soda
• 1/2 tsp sea salt
• 1 bar dark chocolate bar chopped
1. In a bowl combine almond butter, coconut, maple syrup, egg, and vanilla. Stir to combine.
2. Add in baking soda. Mix well.
3. Chop up 1 bar of dark chocolate. Add to batter and mix well.
4. Spoon about 1-2 tbsp of mixture about 1 inch apart on to baking sheets.
5. Bake at 350 for 9-12 minutes. Enjoy!!
