Nothing better than local tomatoes in the summer! 🍅 I often get in a rut of making the same salad over and over (Who doesn’t love the Mimi classic salad? 🤷🏼♀️) But thought I would mix it up tonight and make a take on caprese salad. All this is: tomatoes, red onion, avocado, goat cheese, and basil. Topped it with olive oil, balsamic, salt and pepper. So fresh and I love using ingredients that are in season!
