We have been very busy over here, so I have been making a lot of my go to staple meals. I finally got to get creative in the kitchen again tonight! We bought feta & spinach chicken sausages over the weekend… so created something around those. Was a little nervous, but it turned out great!! Super easy and only took a sheet pan and a pot 🙌🏼
Chicken Sausage Sheet Pan Dinner:
• 1 package of chicken sausage (I used feta and spinach chicken sausages)
• 1 container of zucchini noodles (buy them already spiraled… who has time otherwise lol)
• 1 container cherry tomatoes
• 1 red onion
• 1 cup brown rice
• 1/2 cup feta
• 1/4 cup olive oil
• 1 lemon
• 1 tbsp greek seasoning
1. On a sheet pan toss zucchini noddles, sliced red onion, and cherry tomatoes. Toss in olive oil, salt, pepper, and Greek seasoning.
2. Slice chicken sausage in two quarter size round bites. Add to top of the vegetables.
3. Bake at 400 degrees for 25-30 minutes.
4. While that bakes, make your brown rice as per package instructions.
5. Remove vegetables/ sausages from oven. Squeeze 1/2 a lemon on the tray and toss.
6. On a plate, layer brown rice. Add the vegetable/sausage mixture on top.
7. Top with crumbled feta and a drizzle of olive oil. Enjoy!
