Nothing better than a childhood meal your mom use to make! Is there anything more comforting during a time of so much uncertainty? This pasta is so simple and delish!

Shrimp Linguine:
1. In a large pan heat 1/4 cup olive oil and 1/4 cup butter. Add in 2 gloves of minced garlic and 1 cup of scallions. Cook until scallions are tender.
2. Add your shrimp – cooking 2-3 minutes until shrimp turns pink.
Add 1/4 cup fresh lemon juice and 2 tbsp of basil. Stir continuously for 1 minute.
3. Add half the shrimp mixture to your cooked linguine and toss. (Recommend using whole wheat linguine if you can find it!) Spoon the rest of the mixture on top.

** Recipe does not call for it, but I add mushrooms and broccoli. I sautéed the mushrooms and broccoli and added them in when tossing the pasta.
Enjoy!!
