Check out this Red Snapper I made inspired from a mango drink I had in Mexico! It’s super fresh & fast to put together.

🥭Mexican Mango Fish🥭
Ingredients:
-1 lb red snapper or any white fish
-1 cup Chamoy (recipe below or purchase at a Mexican market)
-1/4 cup @tajinusa
-1 tsp garlic powder
-1 tsp black pepper
-1/4 tsp sea salt
-juice of 1 lime
-mango slaw & cilantro for garnish
Directions:
1. Place the fish on a cookie sheet.
2. Cover with Chamoy & lime juice then sprinkle the tajin, garlic powder, salt & black pepper.
3. Cover and place in the fridge for 20 minutes.
4. Preheat the oven to 450 degrees.
5. Bake the fish for 15 minutes or until the desired temp.
6. Remove from the oven and top with mango slaw (recipe below) & cilantro. Enjoy!

Chamoy
Ingredients:
* 2 tbsp ancho chili powder
* 12 ounces apricot preserves
* 3⁄4 cup fresh lime juice
* 1/4 cup sugar or sweetener
* 1 tbsp salt
Directions:
1. Place all ingredients in a blender and purée until smooth.

Mango Slaw
Ingredients:
-1 cup mangos, diced
-1/4 cup red onions, diced
-1 tbsp diced jalapeños
-1 tbsp cilantro, chopped
-juice of 1/2 lime
-sea salt & black pepper to taste
Directions:
1. Mix all the ingredients in a bowl. Top on fish or eat with chips. Enjoy!
