We have been on a total sweet potato kick in this house! So when I saw this innovative appetizer of Honey Glazed Sweet Potato Medallions from @olivianoceda , I had to try it out! It was a fun mix up from my go to charcuterie boards AND definitely a lot less time consuming.

Honey Glazed Sweet Potatoes Medallions
– 2 large sweet potatoes
– 1-2 tbsp honey
– Goat Cheese
– 1/2 cup raw walnuts
– 1/4 cup dried unsweetened cranberries
– Fresh Mint

1. Preheat oven to 475 F. Peel and slice your sweet potatoes in to medallions. Lay on a greased baking sheet. Coat one side of the sweet potatoes with a thin layer of honey. Bake for 15 minutes. Flip and bake for 10-15 more minutes.
2. While your sweet potatoes are cooking, mix together chopped walnuts and cranberries. Thinly chop your mint. You will want take your goat cheese out of the fridge so it is soft when applying.
3. Spread an even layer of goat cheese on each medallion. Top with your walnut/cran mixture. Sprinkle mint on top and drizzle with honey. Enjoy!
