I created this quick and easy Chicken Tinga Taco recipe for y’all to make today. Check it out and have an awesome day!👇🏼

Ingredients:
-2 tbsp olive oil @bertolli_us
-1 cup onions, diced
-3 garlic cloves, minced
-4 ounces chipotle peppers in adobo
-1 tsp dried oregano
-1/2 tsp cumin
-1/2 cup canned diced fire-roasted tomatoes
-1/3 cup chicken stock
-3/4 tsp salt
-3 cups shredded rotisserie chicken
-optional garnish: diced red onions, cilantro & limes
Directions:
1. Heat the oil over medium heat in a large skillet.
2. Add the onion and sauté for 7 minutes. Add the garlic and cook for another 2 minutes.
3. Add the chipotles, oregano, cumin, tomatoes, stock, and salt. Bring to a simmer and cook for 5 minutes.
5. Transfer the tomato mixture to a blender and puree until smooth. Return the sauce to the skillet.
6. Stir in the chicken and cook for 5 minutes over medium heat. Taste and add more salt if needed.
7. Warm the tortillas on a griddle or pan and add chicken and optional garnishes to make the tacos. Enjoy!
