Shrimp and Farro Soup— good soup.

Ingredients:
– shrimp
– About 1/3 cup of farro
– 2 cans of diced or stewed tomatoes
– 1/2 cup of chicken or vegetable broth
– 1 pack of fresh basil
– Juice of 1/2 lemon
– 1 medium yellow onion
– 4 cloves of garlic
– 1 red bell pepper
– Feta cheese for serving
Seasoning mix (mix in a bowl):
– 1/2 tbsp of smoked paprika
– 1/2 tsp turmeric, Graham masala
– 1/4 tsp nutmeg
– 1 tsp cumin and salt
Cook onions, peppers, some of seasoning mix over olive oil for 5 mins. Add chicken broth and simmer for another 10 mins on medium low heat. Add 3 cloves of garlic, tomatoes, rest of seasoning mix. Simmer on low heat. In the meantime, mix shrimp with a drizzle of olive oil, 1 cloves of garlic and 1/4 teaspoon of chipotle powder and paprika. Add shrimp, cook on low for another 5 mins. Add basil, big handful of parsley, lemon juice. Add shrimp, basil, cook for 5-7 more mins. Top with more fresh basil and feta cheese.
