Is there anything better than a one pan meal!?
Spicy Red Thai Curry 🌶
1. Cube 2 boneless skinless chicken breasts. Set aside.
2. Cut up veggies of choice. Highly recommend diced white onion, red pepper, orange pepper, and broccoli.
3. Drain and rise 1 can of chickpeas.
4. Heat a skillet and drizzle with olive oil. Brown your cubed chicken and remove. Set aside.
5. Add in your chopped veggies. You may have to add in a little water so the veggies steam and cook through. Takes about 10 minutes.
6. Add in your chickpeas and favorite jar of curry sauce. Our favorite is from a local spot in KW!
7. Add in chicken and simmer the curry for 10 minutes.
Recommend serving over brown rice!
