Well… there is snow on the ground in April. Anyone else think snow on the ground with birds chirping in the background is the most bizarre combo?
Give me all the warm meals please. Made an old childhood favorite last night! It was just as good as I remember!!
Pepper Steak:
• 1.5 pounds sirloin or round steak
• 1/3 cup soy sauce
• 1 clove garlic, minced
• 1 tbsp freshly chopped ginger
• 1/3 cup olive oil
• 1 sliced red pepper
• 1 sliced green pepper
• 1 cup finely chopped celery
• 1 cup sliced green onion
• 1 cup chopped mushrooms
• 1 tbsp corn starch
1. Cut beef in to thin strips.
2. Combine soy sauce, garlic, ginger, and 1/4 cup olive oil. Add beef and toss. Let sit for 30 minutes at room temperature.
3. Prepare vegetables.
4. In a large frying pan, heat remaining oil. Add your beef on high heat and toss until browned. Add a little water and reduce heat to medium. Let the beef simmer for about 25 minutes. I like to add the lid at this point. This will help make your beef more tender. Remove meat.
5. Add your vegetables. Cook for about 10 minutes until soft.
6. Add meat back to pan.
7. Mix cornstarch with 3/4 cup water. Add to pan. Stir and cook until thickened.
8. Serve over brown rice. Enjoy!!
