This recipe was just as good as I remembered! I use to make this all the time when we lived in NYC because it was so easy. Nothing like hopping off the subway at 7PM to then make dinner. This recipe is from the first cookbook I ever received by @giadadelaurentiis – still one of my favorites! Don’t forget to pair this with your wine of the week! 🍷

Whole-Wheat Spaghetti with Lemon, Basil, and Salmon:

• 1/2 pound whole-wheat spaghetti
• Salmon filet per person
• 1 garlic clove minced
• 2 cups spinach
• 1/4 cup capers
• 2 lemons
• 1/2 cup olive oil
• 1/4 cup basil

1. Bring a pot of water to boil and cook spaghetti as directed.
2. While that cooks, marinade your salmon in olive oil, salt, and pepper. Barbecue until desired temperature.
3. In a bowl combine capers, minced garlic, basil, and lemon juice.
4. Once pasta is cooked and drained, add to the bowl. Add spinach and remaining olive oil. Toss until spinach starts to wilt.
5. Plate the noodles with salmon on top. Top with grated parmesan. Enjoy!
