Moist & Fluffy Raspberry loaf 🧑‍🍳❤️

This raspberry dessert recipe couldn’t be easier to make! I have the best weekend treat for you 🤩🧑‍🍳👇

THE RECIPE 👇

* Preheat the oven to 160°C. Use a teaspoon of butter to lightly grease a loaf tin. Toss 150g of raspberries with 1 tablespoon flour in a separate bowl.
* In a bowl, beat 150g of caster sugar and 125g butter together until very pale and fluffy. Beat in 2 eggs, a little at a time, then sieve in 150g of self raising flour and 1/2 tbsp of baking powder, mixing well to combine
* Stir in a glug of milk and 2 finely grated lemon zests, followed by the floured raspberries that will crush slightly as they are mixed.
* Transfer to the loaf tin and bake for 40 minutes until well risen and golden. Do the skewer test to ensure well cooked !
* Mash 50g raspberries in a bowl with a squeeze of lemon and some icing sugar. Whilst cake is still hot drizzle over the top to ensure it soaks through.
* Leave to cool and turn out the tin, slice and enjoy ! 🧑‍🍳💡
