These salad bowls have always been a Monday night favorite!
Salad bowls:
Roast chopped sweet potatoes, brussel sprouts, broccoli, and red onion for 25 minutes at 425 F. Before roasting drizzle with olive oil, salt and pepper.
In a bowl combine your choice of lettuce, roasted veggies, chick peas, goat cheese, and sunflower seeds. Toss with your favorite dressing! We like to top ours with grilled chicken. So easy and loaded with veggies to start your week!
