Is there anything better than warm nourishing foods in these crazy cold temps!? This was just what I needed as I looked outside at the 3 feet of snow ❄️ This recipe was inspired from @rachlmansfield Healthy Thai Turkey Meatball recipe. Let me tell you it was a WINNER in our house!

Meatballs:
In a bowl combine 1 pound ground turkey (or chicken – which I used), 1 egg, 1 cup whole wheat breadcrumbs, 2 cloves of minced garlic, 1 tsp minced ginger, 1 tbsp soy sauce, and 1 tbsp red curry paste.
Roll your mixture in to 1 inch balls. Place on a parchment lined baking sheet. Bake your meatballs for 20 minutes at 400 degrees.

Coconut Curry:
While your meatballs are cooking, you can make your curry!
In a skillet, cook 1 chopped red pepper, 1 chopped green pepper, 1 diced white onion, and chopped carrots. I cut the red/green pepper and carrots into thin strips.
Now you can add in 2 tbsp red curry paste (or yellow – whichever you prefer), 1 can coconut milk, and 1 tbsp soy sauce. Simmer your curry.

Once the meatballs are cooked, add them in to your curry. Let them simmer together for about 10-15 minutes. Serve over brown rice, cauliflower rice, or your favorite noodle! Enjoy!
