New recipe!!🚨This super simple dinner took under 30 minutes and is packed with nutrition. Best part? It requires minimal cookware, so the clean up is easy! I’m just going to leave it at that. Enjoy!! 😋

Salmon Bowl:
* 1 filet of salmon per person
* 3 cups chopped or shaved brussels sprouts
* 1 carton cherry tomatoes
* 1 red onion sliced
* 1 cup brown rice
* 1/2 cup parmesan
* 1/4 cup green seasoning
* Balsamic glaze
* Olive oil

1. On a sheet pan toss your chopped brussels sprouts, tomatoes, and sliced onion. Toss vegetables in about 2 tbsp olive oil, salt, and pepper. Bake at 375 for 30 minutes. (Once the salmon is removed from the oven, I crank the oven to 450 to get the brussels crispy!)
2. On a separate baking sheet, place salmon. Drizzle with olive oil. Top with Greek seasoning. Bake at 375 for 20 minutes.
3. Make brown rice according to package.
4. Assembly time! On the bottom, layer brown rice. Top with vegetables. Drizzle balsamic glaze on your vegetables. That is totally optional but adds flavor.
5. Finish with salmon on top. Sprinkle parmesan cheese on everything. I would have drizzled balsamic glaze on the salmon as well, but I was out! Enjoy!!
