Cod with burst tomatoes, getting ready for tomato season over here!!

Cod with burst tomatoes
Burst tomatoes
– cherry tomatoes
– 4-5 cloves of whole garlic cloves
– 1 sprig of rosemary, 1 dried bay leaf
– 2 tbsps of Balsamic vinegar
– 1-2 tbsp pesto
– 1/2 tsp of sugar
– Salt and pepper
– Good splash of Wine
Preheat over to 350 degrees. Roast the tomatoes in a cast iron pan or shallow dish for about 25-30 minutes.

Cod:
– season with salt and pepper, paprika, dried parsley, garlic powder.
– Sear on med-high heat pan. Once both sides have been seared. Turn heat to low and spoon over the juice from the tomato mixture until fully cooked, about 5 more minutes.
– Top with burst tomatoes, parmesan cheese and fresh basil. Serve over your fav salad or rice.
