Hope everyone had a great weekend!! Some wine and cheese may have been consumed at our house 🍷 🧀 (Someone’s gotta test the wine of weeks…🤷🏼♀️)Starting Monday off right with a big old salad to get those greens in – all about BALANCE!
Our GO TO salad is mixed lettuce, spinach, roasted brussel sprouts, roasted broccoli, roasted sweet potatoes, roasted red onion, chick peas, and goat cheese.
I throw the brussels, broccoli, red onion, and sweet potato on a sheet pan. I coat them in olive oil, salt, and pepper. Roast at 400 degrees for 30 minutes. We prefer everything well mixed, so I toss all the ingredients in a bowl and mix it with Mimi’s famous dressing.
Top with grilled chicken and you’ve got yourself a delicious salad!!
