I made this so many times over the holidays, so simple and delicious!
Easy Roasted Carrots
Ingredients:
– carrots
– Seasonings: fresh rosemary, fresh thyme, cinnamon, nutmeg (about 1/4 teaspoon each), salt and pepper.
– Honey
– Fresh garlic
– Olive oil
– Parsley
– Red wine vinegar
Preheat over to 400 degrees. Drizzle carrots with olive oil and mix in seasoning/garlic. Drizzle honey, and roast for about 20-30 minutes, when almost done, roast for about 5 minutes.
In the meantime, mix a handful of fresh parsley, garlic, a good amount of olive oil and red wine vinegar. Add salt and honey to taste. Spoon over roasted carrots and voila!
Tip- use tri color carrots to make this dish more fun
