CREAMY SWEET POTATO SOUP 🥣
The steps 👇
1. Cook 2 chopped white diced onions and 4 chopped carrots in a large stock pot over medium high heat. Cook with oil and stir frequently for 6-8 minutes until the carrots begin to soften.
2. Add 2 cloves of garlic, a chopped ginger root and a few chilli flakes, and paprika to the pot and stir for about 2-3 minutes.
3. Add 6 chopped & diced sweet potato and 250ml of vegetable broth to the pot.
4. Turn onto high heat, bring it to a boil, then reduce the heat to low to let the soup simmer for about 25 minutes.
5. Lastly, transfer the soup to a high powered blender and blend on high for one minute, or until it’s creamy enough.
6. Garnish it with coconut cream or yogurt, and black pepper, serve with crusty bread – and serve! Easy week day lunch sorted !
