Thai Ginger Peanut Salad 🥜 👩‍🍳

Who’s ready for an easy weekday lunch meal prep? I absolutely love this salad, it takes just 15 minutes to make and is so zingy and fresh !

THE STEPS 👇

1. To make the dressing, whizz together 2tbsp peanut butter, 1 whole juice of a lime, 2tbsp rice vinegar, 2tbsp of sesame oil, 1tbsp soy sauce, and chopped ginger, pop all ingredients in a food processor or blender until smooth.
2. Chop up half a red cabbage in small pieces, then ribbon 2 carrots and half a cucumber and mix well. Then add 1 handful of cashew nuts and a small handful of edamame beans and some more fresh ginger. Add all together in a salad bowl, pour over the dressing and mix well. Garnish with peanuts and more ginger to serve. Divine!
