EASY MONDAY DINNER 🍽
The evenings are still dark & the New Years resolutions are starting to wear off…. So easy to come back from work and hit up Deliveroo. But don’t worry I got you!
HALLOUMI & RED PEPPER SALAD 👩🍳
The steps 👇
1. Chop up one white onion & 2 cloves of garlic and sizzle in a pan with some oil & mix well. Chop up 2 red peppers & 2 courgettes & cook on low heat for 15 minutes
2. Next add in one yellow pepper & your pulses of choice. I used some butter beans and half a tim of kidney beans. Mix well and squeeze in some fresh lemon & season with salt & pepper. Serve & top with lightly grilled halloumi. Your easy mid week dinner sorted ✅
