This pork was inspired by a drink I had in Mexico that was made with Mangos, Chamoy & Tajin. This combination is out of this world! You must try this recipe asap👇🏼

🥭Mexican Mango Pork🥭
Ingredients:
-1 pork loin (about 2.5 lbs)
-1 cup Chamoy (recipe below)
-1/4 cup @tajinusa
-2 tsp garlic powder
-1 tsp black pepper
-1/4 cup lime juice
-mango sauce & cilantro for garnish
Directions:
1. Place the pork on a cookie sheet.
2. Cover the pork with Chamoy & lime juice then sprinkle the tajin, garlic powder, & black pepper.
3. Cover and place in the fridge for at least 6 hours or overnight.
4. Preheat the oven to 450 degrees.
5. Bake the pork for 20 minutes or until the internal temp reaches at least 150.
6. Remove from the oven and top with mango sauce (recipe below) & cilantro. Enjoy!

Chamoy
Ingredients:
* 2 tbsp ancho chili powder
* 12 ounces apricot preserves
* 3⁄4 cup fresh lime juice
* 1/4 cup sugar
* 1 tbsp salt
Directions:
1. Place all ingredients in a blender and purée until smooth.

Mango Sauce
Ingredients:
-1 tsp coconut oil
-3/4 cup mangos, diced @localfarmok
-1/4 cup red onions, diced
-1 tbsp cilantro, chopped
-1/2 tsp salt
-1/4 black pepper
-1/4 garlic powder
Directions:
1. Sauté the onions in oil for 3 minutes then add the rest of the ingredients.
