Shrimp shakshuka, perf for a rainy day.
– shrimp
– San Marzano 28 oz
– Handful of fresh basil
– Zest and juice of 1 lime
– 1 medium yellow onion
– 4 cloves of garlic
– Shishito peppers (or bell pepper)
– Feta cheese
Seasoning mix (mix in a bowl):
– 1/2 tbsp of paprika
– 1/2 tsp chipotle chili powder, turmeric, Graham masala, oregano
– 1/4 tsp nutmeg
– 1 tsp cumin, salt
– dash of red pepper flakes
Cook onions, peppers, half of seasoning mix over olive oil for 7-10 mins. Add garlic, tomatoes, rest of seasoning, lemon juice and zest. Squish tomatoes with a whisk. Simmer for about 10 mins, occasionally mixing. Add shrimp, basil, cook for 5-7 more mins. Top with more fresh basil and feta cheese.
