Made a Lourdes Street favorite last night from @halfbakedharvest – Coconut Popcorn Chicken 🥥
1. Combine a cup of plain greek yogurt with a quarter cup of dijon mustard and set aside.
2. Next, combine a cup of breadcrumbs with half a cup of unsweetened coconut flakes. Set aside.
3. Cut chicken in to bite size pieces. Dip the chicken in the yogurt mixture, then roll in the breadcrumb mixture. Place on pan.
4. For the extra crisp – drizzle olive oil on top of chicken before baking.
5. Bake at 425 F for 20 minutes.
