Lesson learned: food photography is no joke. Who knew the hardest part of this account would be trying to take photos!? Although these Chipotle Stuffed Peppers may not look the best (🥴) they sure are tasty!!

Chipotle Stuffed Peppers:
1. Start with cooking 1 pound ground turkey over medium heat. Once cooked, set aside in a large bowl.
2. Dice and chop 1 white onion, 1 zucchini, mushrooms, and 1 sweet potato.
3. In your skillet sauté the white onion until fragrant. Add to your bowl with the turkey.
4. Add your sweet potatoes to the skillet and cook until they start to soften. Add to the bowl. Next sauté your zucchini and mushrooms until soft. Add to bowl.
5. In your bowl, add a can of fire roasted tomatoes, a handful of shredded cheese and 1 package of “Frontera Fajita Skillet Sauce with Chipotle and Lime.” Mix everything together.
6. Cut 4 peppers in half and stuff with mixture. Place each pepper in a casserole dish. Top with shredded cheese and jalapeños.
7. Bake at 350 for 25 minutes.
