Check out this BBQ Salmon! It’s my new favorite and it was so easy to make. I topped it with this simple slaw which tied everything together and gave it the perfect texture. This is a MUST try for you this week! Here’s how to make it:

Ingredients:
-1 lb center cut salmon, cut into chunks
-2 tsp avocado oil
-1/2 tsp salt
-1/4 tsp pepper
-1/2 tsp garlic
-1/4 cup bbq sauce {I used no-sugar added}
Directions:
1. In a small bowl add the salmon chunks & coat with avocado oil.
2. Add the spices & bbq sauce then rub into the salmon.
3. Place in the fridge to marinate for at least 30 minutes before cooking.
4. Heat a sauté pan over medium heat & add the salmon.
5. Sauté for about 4 minutes or until the side down is browning then flip over to get the other side browned. If the chunks are big then brown on the other sides.
6. Remove from the heat and plate the salmon.
*you can drizzle more bbq sauce if desired. I topped my with a simple slaw(recipe below) & fresh cilantro. Enjoy!

Simple Slaw
Ingredients:
-2 cups finely chopped cabbage (mix of red & green)
-1/2 cup shredded or strips of carrots
-dressing: 1/4 cup Greek yogurt, 1 tbsp Apple cider vinegar, 1 tsp Sriracha, 2 tbsp water to thin the dressing, 1/2 tsp garlic powder with salt & pepper to taste.
Directions: whisk together all ingredients above except for the veggies. Add more water or vinegar if needed to thin the dressing. Pour sauce over slaw & mix.
