Absolutely nothing easier than a one pan meal on a busy Monday! Growing up we always had “fajita fridays” before taking off to hockey games, so it still feels weird to me to make these any other day of the week! Either way, I am here for the easy dinners 🙋🏼‍♀️

Sheet Pan Fajitas:
• Red pepper
• Yellow pepper
• Green pepper
• Red onion
• 1package of mushrooms
• 1 pound boneless skinless chicken breasts
• Package fajita seasoning
• 1/4 cup olive oil
• Package of whole wheat tortillas
• Avocado
• Shredded cheddar cheese

1. Cut up your peppers and onion in to long thin slices. As you chop them, toss them on your sheet pan.
2. Toss veggies in 1 tbsp olive oil and half a pack of fajita seasoning.
3. Use the same cutting board to now cut the chicken in to 1 inch cubes. I actually prefer using chicken tenders because it makes chopping that much easier.
4. Toss the chicken in remaining olive oil and fajita seasoning.
5. Lay the chicken evenly on top of the veggies on your sheet tray.
6. Bake at 350 for 25 minutes.
7. Assemble the fajitas to your liking. Enjoy!!
