We love all the spices in this household! (And cucumbers, a side of cucumbers is always a good idea). Here’s my Indian inspired salmon over Trader Joe’s daal that was super delish.

Indian salmon
Spice mix:
– 1 tbsp graham masala; 1 tsp cumin, smoked paprika & salt; 1/2 tsp onion powder and turmeric; black pepper

Coat salmon with olive oil and generous drizzle of honey and 1/2 tbsp of Dijon mustard. Add spice mix, rub well. Let sit for about 30 mins.

In the meantime, In a sauce pan, simmer the following together for a few mins, until golden brown:
– 3-4 cloves of garlic 1.5-2 tbsp butter, 3 tsp ginger, and a generous splash of red wine vinegar.
**lay thin slices of lemon on baking tray. bake salmon, skin side up, in 400 degrees for 15-18 mins. Baking upside down helps keeps the salmon from drying out and also helps soak in flavor.
**when salmon is ready, flip and generously drizzle the butter mixture over salmon. Serve over Trader Joe’s yellow daal, top with cilantro and lots of lime.
