Temps are in the 60s and the first leaves are beginning to fall, so it’s time for pumpkin everything, right!? 🍂 Tried out these pumpkin oatmeal cups from @ambitiouskitchen and they were a home run! I made them in to mini muffins and they will be the perfect snack during this work week. Can’t wait to try out all the pumpkin recipes this fall!

Pumpkin Oatmeal Cups:
• 3/4 cup pumpkin puree
• 1/2 cup natural peanut butter
• 2 large eggs
• 1/4 cup maple syrup
• 3/4 cup almond milk
• 1 tsp vanilla
• 2 cups oats
• 1 tsp baking powder
• 2 tsp cinnamon
• 1/2 tsp nutmeg
• 1/2 tsp all spice
• 1/2 tsp ground ginger
• (optional) chocolate chips

1. Preheat oven to 350 degrees. In a bowl mix together the pumpkin, peanut butter, eggs, maple syrup, almond milk, and vanilla.
2. Stir in oats, baking powder, cinnamon, nutmeg, allspice, ginger, and chocolate chips.
3. Evenly distribute in to muffin pan. Make sure to spray your muffin pan with non stick spray!! You can use a normal size muffin pan or mini.
4. If using normal size muffin pan, bake for 30 minutes. If mini, bake for about 18 minutes. Enjoy!!
