Made this for dinner earlier this week and it took under 30 minutes 🙌🏼 (not that I don’t have all the time on my hands these days to cook longer meals 🤪)

Oven baked tilapia over mashed cauliflower with roasted brussel sprouts 😋

Tilapia:
• Drizzle fish with olive oil. Make sure both sides are lightly coated. Sprinkle fish with spice combo: 2 tsp Italian seasoning, 1 tsp garlic powder, 1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika. Sprinkle on both sides of fish.
• Bake at 375 for about 12 minutes.

Cauliflower Mashed:
• Cut a head of cauliflower in to chunks. Add to a pot of boiling water. Boil until cauliflower becomes fork tender.
• Drain excess water. Mash cauliflower until it forms a “mashed potato” consistency. Stir in 1 tbsp butter and 1/4 cup diced green onion.

Brussel Sprouts:
• Clean and chop sprouts. Lay on a greased baking sheet. Toss in olive oil, salt, and pepper. (I also like to add red onion – optional).
• Bake at 375 for 20 minutes. Toss in a splash of balsamic vinegar and sriracha.
