Been keeping it extra simple this week with a busy schedule! This dinner may look “plain” but let me tell you, the real star of the show is the mashed cauliflower on bottom 😍 It has become our new favorite base for meals and is SO easy!

Mashed Cauliflower:
– Fill a pot with chunks of cauliflower and water. I normally fill the pot about 1/2 way with water. Bring cauliflower to a boil. Let is boil until your fork can easily poke through the cauliflower.
– Drain water and return to stove top. Mash your cauliflower with a masher (or fork) until it looks like mashed potatoes.
– Stir in 1-2 tbsp butter, chopped green onion, and any spices of your choice! I like to do salt, pepper, onion, and garlic powder.

Salmon:
– I marinated my salmon with maple syrup, olive oil, and Dijon mustard. Bake at 375 for 20 minutes. On the same sheet pan, add your asparagus. Toss in olive oil and Montréal steak seasoning.
