This is quick & easy and perfect for lunches on the go!

1. Heat 2tbsp of oil in a large pot over medium low heat. Add 2 chopped white onion and saute for a few minutes until softened. Add 300g diced chicken, 4 chopped carrots, 4 chopped potatoes and cook for a minute or two. Add a big handful of ginger, 2 garlic cloves and 4tbsp of yellow curry paste and saute for 3 minutes.
2. Add 2 cans of coconut milk to the pot. Stir 2 teaspoons of cornstarch. Bring to a boil. Reduce heat and simmer for 20-30 minutes or until the chicken and potatoes are cooked through. Adjust the thickness of the curry by adding more water to thin, if needed.
3. Lastly stir in 1 tbsp of fish sauce, 2 tbsp of brown sugar and a squeeze of lime juice. Simmer 5 more minutes. Serve with any type of rice (white or brown) or spaghetti squash or quinoa. Perfect ! 🤩👨‍🍳
